A suh mi duh mi ting

We're not ones to brag (OK, maybe sometimes). But, since you asked, here's some more about how we got started.

It All Goes Back to Mom

Well, maybe not your mom, but Ray Simmonds’ mom. Ray watched his mother cook the most amazing traditional Jamaican food for years. After being raised in Jamaica, he came to the US at the age of 13. He found himself cooking the food his mother cooked, with his own twist, adding his own style and flavoring. Now, at the urging of his wife and daughter, the family has opened their own Jamaican restaurant in downtown Fredericksburg. Thanks Mom!

Wicked Atmosphere

We mean that in the best way.  In Jamaican, that means we have an atmosphere you’ll immediately love.

So, what’s in a name?

Pimenta dioica, also known as allspice, is an essential ingredient in jerk seasoning, which is used extensively throughout the island in many dishes. Although pimenta is also a pepper (pimenta moida), the pepper that is used in most Jamaican meals is the scotch bonnet, also known as bonney peppers or Caribbean red peppers. Hence the restaurant’s most-fitting name.
